ReplyDeleteHi chocolate lady, a friend of mine has a few questions about rice kugel and I can't seem to figure out how to email you. As you are the translator of the Fanny Lewando cookbook, I thought you might be able to help. First question is: what kind of rice would have been used by my friend's Baba? She's using Uncle Ben's converted rice but is unsure if that's the best. Secondly, the kugel is baked in a bain marie, but for some reason the apples on top get dried out. When her Baba made the dish the apples were soft. Please help! Thanks, Sharon

ReplyDeleteMy best guess is that a long grain type like Anson Mills Carolina Gold would be close to what was used in Vilne, but I think short grain rice would also make a delicious, though different kugl.
I have never tried converted rice, but I imagine that could be good too--is it a parboiled quick-cooking rice?
