I wish I knew what it was, but no clue.
its a foam of some kind, with some kind of deeply colored fruit or vegetable puree as an ingredient... a sabayon maybe?
for my money, it looks like a blood orange foam, but then again, i am a culinary school drop out.

I think its a partialy cooked crepe with rasberry and blueberry puree.

Thank you, thank you, thank you all so much for guessing. I love all your answers, and I feel inspired to make some of the items suggested. The winner is Nandita, whose guess is the closest. This is the surface foam that formed on freshly expressed juice from cucumbers, beets, carrots and purple cabbage. I will post a recipe in the morning. Nandita, I will be in touch.
