Just a couple of days ago I checked out the various summer schools etc. The best overview imho is here http://www.cs.uky.edu/~raphael/yiddish/programs.html
The Yivo thing may be the cream of the crop, but their pricing is absolutely stellar: They charge you some 4000$ plus acomm & food. Moishe rabbenu!

I agree that Raphael Finkel's page, linked in the sidebar at right, is an amazing resource. YIVO offers some scholarships for the summer program, which is indeed pricey.
At http://eYiddish.org , you can learn Yiddish with a teacher over the internet. Prices are very reasonable.
You can learn a few new Yiddish words and phrases at wikibooks, Yiddish!!! Great site, have a look!!!
