This is an appropriate time to remember that the joyous holiday of peysekh is hurtling toward us like a monstrously gigantic chicken (this image, reproduced from the YIVO encyclopedia, is a New Year's Greeting, having nothing to do with peysekh, but that is still a pretty scary chicken). I always grate my potatoes in the food processor for kugel, because I like the sticky consistency it gets. But only for kugel.

Grating in the processor is usually not a problem, although some recipes need hand-grating. Mashing needs to be done by hand.
