Carrots of Many Colors

In our little corner, the carrots are here. From the left, orange carrots, white carrots, red carrots, yellow carrots, "rainbow" carrots (yellow-orange-pink), and purple carrots.

That's wonderful!! Imagine what you could do with them in a salad. Or roasted.

I have not tried them all, but I think thay all taste a bit different. even different orange varieties have different tastes.
The USDA has a few websites on carrot pigment that claim they all taste the same, but I think what they really mean is that they taste similar enough that you need not be afraid of them. I sould include a link if I get to it.

They do make very pretty salads. The color of the red and purple ones is only skin-deep, though, so you can't peel them if you want the full effect.
